Thanksgiving Catering Heating Instructions
Whole Turkey
- Reheat Turkey: Preheat oven to 350°F. Cover turkey and heat for 45-50 minutes or until the internal temperature reaches 165°F.
- Reheat Sides: Remove plastic covers from mashed potatoes, green beans, stuffing, and sweet potatoes. Place in the 350°F oven for 30-45 minutes, stirring occasionally, until heated through.
- Heat Gravy: Pour gravy into a small pot. Heat on the stovetop over low heat, stirring occasionally, until it simmers. Remove from heat and serve immediately.
- Warm Bread: Preheat oven to 375°F. Heat bread for 20-25 minutes.
Leoncini Ham
- Reheat Ham: Preheat oven to 320°F. Place ham uncovered in the oven for 15 minutes or until the internal temperature reaches 165°F.
- Reheat Sides: Place mashed potatoes, carrots, and pasta in the oven, covered, for 30-45 minutes. Heat Penne Pasta with Fonduta, covered, for 45 minutes.
- Heat Gravy: Warm gravy on the stovetop over low heat for 10 minutes, stirring occasionally.
- Warm Bread: Preheat oven to 375°F. Heat bread for 20-25 minutes.
Boneless Prime Rib
- Prepare Roast: Bring the rib roast to room temperature by letting it sit for an hour.
- Initial Cook: Preheat oven to 450°F. Place the roast in the oven for 15 minutes, then reduce heat to 325°F. Leave uncovered.
- Check Temperature: Insert a thermometer into the thickest part of the roast. Cook until the internal temperature reaches 120°F. Cover with foil and let rest.
- Reheat Sides: Increase oven temperature to 350°F. Place mashed potatoes, butternut squash, green beans, and Penne Bolognese Pasta, covered, in the oven for 30-45 minutes.
- Heat Sauce: Warm sauce on the stovetop over low heat for 10 minutes, stirring occasionally.
- Warm Bread: Preheat oven to 375°F. Heat bread for 20-25 minutes.
Roast Beef Tenderloin
- Initial Cook: Preheat oven to 450°F. Place the tenderloin in the oven for 15 minutes, then reduce heat to 325°F. Leave uncovered.
- Check Temperature: Insert a thermometer into the thickest part of the tenderloin. Cook until the internal temperature reaches 120°F. Cover with foil and let rest.
Prosciutto-Wrapped Pork Loin
- Preheat Oven: Preheat oven to 325°F.
- Cook Pork Loin: Place pork loin in the oven, uncovered. Cook until the internal temperature in the center reaches 145°F.
- Rest: Allow the pork loin to rest for 15-20 minutes before serving.
Porchetta Roast
- Preheat Oven: Preheat oven to 325°F.
- Cook Porchetta: Place roast in the oven for 30 minutes or until the internal temperature reaches 155°F.
Salmon
- Preheat Oven: Preheat oven to 325°F.
- Cook Salmon: For fully cooked salmon, bake for 15 minutes or until the internal temperature reaches 140°F.
Half Trays
- Place trays in the oven and heat until the desired temperature is reached. Adjust time based on the specific dish and portion size.
